Chrome is the official, stable, release build from Google.
Chromium is the development build that gets packed nightly, that includes recent patches and bug fixes to the source code. It is the most recent version, but may not always be the most stable, and has not officially been given a version and released.
(Recent Chromium patches fixed the "can't scroll back up" issue, certain flash issues, etc.)
